Red Onion




1kg red onion

1 lemon juice

400 gr sugar

2-3 cloves

1 glass white wine

1-2 laurel leafs

Olive oil

10 gr pectin


Clean and cut the onions in thin slides. Fry them on a pan with olive oil, the laurel leafs and the cloves. When they get golden, add the sugar and the lemon juice and let them cook until the sugar is completely melted and the mix reaches a good consistence. Keep cleaning the mix from the foam that creates on top. Add the glass of wine and the pectin and let it cook for other 10 minutes. Fill the pots and close them immediately, put them upside down and let them cool down.
